Opening of the restaurant, founded by Parviz Parviz, a relative of the Shah of Persia. It opened as a restaurant-bar inspired by English pubs, catering to the Lisbon elite.
The opening event was graced by the presence of famous figures such as Carlos do Carmo, the voice of fado and the soul of Portugal, who added an unmatched charm to the occasion.

One year after the opening of Pabe, the Expresso newspaper settled at number 37 of the same street, becoming a close neighbor of Pabe. The restaurant quickly became a gathering spot for journalists, including Francisco Pinto Balsemão, as well as other prominent figures such as Marcelo Rebelo de Sousa.

After April 25th, Parviz Parviz, the founder of Pabe, was forced to step down due to the political and social changes in Portugal. The restaurant was then left under self-management by the staff. Despite these changes, Pabe continued to maintain its significance as a gathering place for the political and cultural elite of the time.

 In the 1980s, Pabe continued to be a favored meeting spot for the political and business elite. Its connection with Expresso remained strong, and it was during this period that the famous "Almoços no Pabe" (Lunches at Pabe) interviews were published in the newspaper, featuring guests such as Mário Soares, Jorge Sampaio, and Natália Correia.

In 2017, Pabe underwent a renovation led by its current owners, Luis Espírito Santo and José Pinto. The renovation brought a touch of modernity to the space while preserving the classic essence and charm that define it.
